杜氏 YUJIRO
田嶋 雄二郎(YUJIRO TAJIMA)
醸造家/1988年福井市生まれ。
Brewer/Born in Fukui City in 1988
江戸時代に創業した酒蔵の次男として生まれ、小中学生時代は野球、高校時代は庭の畑を耕し、農業に没頭する。
15歳の時、長男が酒蔵を継がないと決意し、大学は東京農業大学に進学し【発酵】の道へ。
恩師である中田久保教授や仲間に恵まれお酒というものにのめり込む。
また卒業論文では、日本酒ではなく「ワイン」を研究(蔵に戻ればいくらでも日本酒のことは出来ると判断。)
Born as the second son of a sake brewery
founded in the Edo period,
he devoted himself to agriculture,
playing baseball in middle school
and tilling the garden in high school.
When he was 15 years old, his eldest son
decided not to take over the sake
brewery, so he entered Tokyo University
of Agriculture and pursued a career
in fermentation.
Thanks to his mentor, Professor Hisayasu
Nakata,and his friends, he fell in love
with alcohol.
Also, for his graduation thesis, he
researched `wine' rather than sake
(he decided that he could do as much as
he wanted with sake if he returned to
the brewery).
大学4年生時には教授の許可を頂き、現在の【PURE RICE WINE】を造るため蔵で本格的に酒造りを開始。
卒業後は蔵に戻り、前杜氏である武藤利夫(能登杜氏)と4年間共に酒造りをし、2015年より酒造りの責任者である杜氏に就任。
現在もワイン製法やオーク樽貯蔵など、数々の新しい酒造りにも挑戦しております。(2023年より7代目代表も務める)
In his last year at university, he
received permission from his professor
and began brewing sake in earnest at
the brewery to create the current
【PURE RICE WINE】. After graduating, he returned to the
brewery and worked with formerbrewery
master Toshio Taketou (NOTO TOJI) to
make sake for four years,and in 2015
was appointed brewery master.
We are currently experimenting with many
new ways to make sake,such as wine
manufacturing methods and oak barrel
aging. (He will also serve as the 7th
president from 2023)
